Blueberry Zucchini Bread
Ingredients:
1 egg (or flax egg)
1/3 cup coconut oil
1/2 cup Greek yogurt
1/2 cup honey
1 tsp vanilla extract
1.5 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 cup shredded zucchini
3/4 cup frozen blueberries
How to:
1. Shred 1 cup of zucchini (do not squeeze out extra liquid)
2. In a bowl, whisk together egg, coconut oil, greek yogurt, honey, and vanilla until combined
3. In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon
4. Fold wet ingredients into dry ingredients until just combined
5. Fold in zucchini and blueberries until just combined- do not over mix
6. Pour batter into a greased 9x5 loaf pan
7. Bake for 40 minutes at 350 degrees
